Generally I'd consider either 1 week or 1 month prior to the hack to be safe to restore from, really it depends on how much re-writing you want to do. ;)
You'll still want to look for the obvious signs after restoring and run through the guide and security measures just in case.
It's great that you have so many backups to choose from, I wish more people were just as prepared. :)
